Easy Thai Green Curry with Curry Paste From Scratch

When I last visited Thailand (Phuket to be specific) a fantastic chef showed me how he made an outstanding Thai Green Curry with chicken.

Funnily enough he was a little surprised that I wanted to make the curry paste from scratch because he used shop bought curry paste – Mai Ploy Green Curry Paste actually. He very obligingly showed me round his kitchen, as well as graciously providing me with this beautiful recipe along with the freshly made curry paste I had hoped for.

It was served with finely chopped red chillies and kaffir lime leaves although his presentation was better than mine!

A surprising ingredient was a teaspoon of chicken stock powder added at the end which added a more concentrated salty, chicken flavour – this is optional as you may find the fish sauce more than salty enough!

Thai Green Curry Recipe

Thai Green Curry with Curry Paste From Scratch

For the Thai Curry Paste

  • 3-4 cloves of garlic
  • 1 lemongrass stalk
  • 2 Birds Eye Chillies
  • 4-5 Shallots Peeled
  • Oil
  • Soy Sauce
  • Juice & Zest of 1 Lime

For the Green Curry

  • Peanut or Soybean Oil
  • 4-6 Kaffir Lime Leaves
  • 1 tin Coconut Milk
  • 1 tsp palm sugar (or granulated sugar)
  • 500ml veg or chicken stock
  • 1 tbsp dark soy sauce
  • 1 tbsp fish sauce

Thai Green Curry Method

Blitz in the Nutribullet (or whatever blender you have) then add a tablespoonful to a medium hot pan with peanut or soybean oil.

Add 4-6 Kaffir lime leaves, 1 tin coconut milk, 500ml veg or chicken stock, 1 tsp of palm sugar, 1 tbsp fish sauce, & 1 tbsp dark soy sauce.

Bring to the boil and add your protein of choice – chicken, beef, prawns or plant based protein.

Turn the heat down to a simmer, place a lid on your pan and leave the curry for around 40 minutes until the meat is cooked through.

Serve with Jasmine rice topped with Thai basil leaves or fresh coriander.

What Goes with Thai Green Curry?

Thai green curry is often served with Jasmine rice and Thai sweet basil. It is is sometimes garnished with finely sliced chillies and Kaffir lime leaves.
