Mu Shu Vegetable Recipe

This delicious Mu Shu vegetable recipe is tasty, healthy and well worth trying. You can cook it up quickly for a fantastic weeknight or weekend dinner. It’s a lovely fakeaway which is cheap, tasty and healthy.

Serve it with noodles, rice or in pancakes.

Easy Mu Shu Vegetable Recipe

Mu Shu Vegetable Ingredients

  • 2 beaten eggs
  • 250g or 1 cup of sliced shiitake mushrooms (oyster mushrooms work well too)
  • 750g or 3 cups of sliced green cabbage
  • 2 teaspoons of grated fresh ginger
  • 2 tablespoons of dark soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon of sesame oil for frying
  • 2 teaspoons of cornflour (cornstarch)
  • thinly sliced scallions (spring onions) for garnishing

Method

Marinade the sliced mushrooms in a bowl or ziplock bag for about 15 minutes in the soy sauce, hoisin sauce, cornflour (cornstarch) and a little water and sesame oil.

Cook the eggs in a pan with some canola oil, vegetable oil, or groundnut oil (peanut oil) until they are just beginning to set. Use a spatula to break the egg up and then add the marinade, mushrooms and the cabbage.

Fry the vegetables and the marinade in your pan or wok at high heat and mix thoroughly to combine.

Serve with steamed rice, noodles or in bought or homemade pancakes (for recipe see below) with a garnish of thinly sliced fresh scallions.

Moo Shu Sauce

The Moo Shu Sauce for this recipe consists of the following ingredients:

  • 2 tablespoons of dark soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon of sesame oil for frying
  • 2 teaspoons of cornflour (cornstarch)
