Wagamama Ginger Chicken Udon Recipe

This recipe can be adapted according to whatever proteins and vegetables you might already have at home. If you don’t want to use chicken, try beef, pork, duck or tofu instead.

The red onion and scallions are very much part of Wagamama’s Ginger Chicken, but you could substitute white onion if that’s all you have, or leave out the spring onions if you like.

If you can manage to get Japanese pickles (especially the pink ones) they are delicious and authentic additions to the dish. The addition of sweet Japanese Mirin is also well worth it if you can get it, but if you can’t rice vinegar with a pinch of sugar is a reasonable substitute.

Try this Wagamama Ginger Chicken Udon recipe for a quick and delicious stir fry in the style of the restaurant chain.

  1. Place the cornflour in a bowl and add the chicken pieces, tossing well to coat
  2. Get a wok or pan onto medium high heat and fry off the chicken in oil until just cooked and then set aside
  3. Put the wok or pan back on the heat and add oil and then the red onion, garlic, ginger and beansprouts – cook at high heat for 2-3 minutes until beginning to soften
  4. Add the mangetout, scallions and chilli, cook for a minute or so and then add the soy sauce, mirin, cooked chicken and the egg halves to warm through
  5. Serve hot garnished with the coriander, pickled ginger, and sesame seeds. Squeeze a little lime juice over the top if desired

Notes

  • You can substitute other proteins instead of chicken as well as tofu or just going for a vegetable dish.
