Instructions For Homemade Mayonnaise

  1. Add the large room temperature egg to the salt, lemon juice (or vinegar) and the mustard into a small bowl and whisk until combined
  2. Continue to whisk the egg, mustard, salt and oil mixture and then add a few drops of oil at a time until the mixture begins to emulsify and thicken
  3. Once the mayonnaise has begun to thicken, you can add the oil a little more quickly in a thin trickle, continuing to whisk it quickly until the whole cup of oil has been added and emulsified
  4. Alternatively you can add all the ingredients to a food processor (except the oil) and with the motor running trickle the oil in slowly until you have a thick mayonnaise consistency
  5. Instructions for the Sriracha Mayonnaise

  6. Add the mayonnaise, Sriracha hot sauce, lemon juice, grated garlic, together into a small bowl and whisk to combine thoroughly
  7. Add in the salt and pepper to taste. Use right away or keep it for up to 4 days in the fridge
